I would like to change the font of the theme because it is much too clear, I can change the css I would just need the selector to replace this font. In the customizer, we can only change the hover at the font level..

The font of the theme you can change directly via Theme Settings -> Typography -> Text font.

Why did they stay in lato? Knowing that I modified , why does the theme font not change?

In order to change the font for these menu items, you should use the “Advanced typography” functionality, or rather navigate to Theme Settings -> Typography -> Advanced typography -> create a rule with the “Menu dropdowns second level” item and change font in the appropriate field (more detail in the below screenshot).
