1. The product ordering functionality comes from WooCommerce itself, so if you want to change it, navigate to Appearance -> Customize -> WooCommerce -> Product catalog -> and choose available options for sorting – https://prnt.sc/sGaoBzSEcQha

2. To hide the products from the shop, use the default option from WooCommerce -> https://prnt.sc/mpl7pBd2vR6s

Because that product is hidden on the Shop page so it is hidden on the main page as well. Unfortunately, there is no way to hide it only for the Shop page and leave it for the Home.
