You can create appropriate attributes and show them all on the product page. By default, all the attributes are displayed in the drop-down.

The options provided by our theme are attribute swatches. The default WooCommerce suggest only drop-down.

Enable swatch as shown http://prntscr.com/jskm29 if you do not want drop-down.

I don’t want this attribute to display in all product page

The attribute is shown on the products, which you have configured. Each product is added with attributes individually.
