And how can put category and subcategory list on side bar? (here as list https://prnt.sc/vPZFQ_JkVUdf)

Login to dashboard > Layouts > edit Archive layout > remove the categories widget in the page builder.
Go to Appearance > Widgets > Add the categories widget in the shop page widget area.
