First of all thanks for choosing our Theme, we are glad to be you in WoodMart WordPress family :-).
To deactivate shop and product pages to use our theme for a blog etc. Go to >> Dashboard >> Plugins >> Disable or delete WooCommerce plugin.
And it will work as a regular blog or corporate websites.

thanks for attention, but it’s not the point of my question, it is possible to deactive/remove the menu SHOP and PRODUCT PAGE in theme setting?

Unfortunately It is not possible to remove the settings for shop and product pages from the theme settings panel. It requires customization and this is beyond our limitations and support policy.
