The category images are generated by a separate WooCommerce Auto Category Thumbnails plugin.
But under it will remain the Placeholder image from woocommerce

You need to enter the category and remove these demo images: Dashboard > Products > Categories

Deactivate all the plugins not related to the theme, remove all the demo images from the product categories, enable plugin and check.

If you still have the problem contact the plugin support as this is the issue of Woocommerce and plugin incompatibility and our theme does not influence.
