Replace Colour Swatches with Dropdown Menu

How do your replace the colour swatches with a dropdown menu instead?

The ‘enable swatch’ checkbox is unticked on every colour. Yet they still appear on the product page.

I’ve found not entering a colour replaces the swatch with a word but this isn’t ideal either.
