Yes, you can try the “Sort by price(desc)” so that the product shown at the last price wise, will be shown at the top in your store.
From Appearance >> Customize >> WooCommerce >> Product Catalog >> Default product sorting.

No, it did not work like that to display the latest product in your shop. The option low to high price will display the product with less price first and then accordingly shown the products.
If you want to display the latest product at the top then you need to select the “sort by most recent” option from Appearance >> Customize >> WooCommerce >> Product Catalog >> Default product sorting.
