Our site uses shop lists as categories (https://iqonix.de/cat/moebel/), but there is a shop page(https://iqonix.de/shop/) to which we do not have access in the admin panel to edit meta data

And also this page does not display h1

This page uses meta title and meta description from the product card

Maybe you are using the custom layout of the theme for the shop page. If you are using a custom layout You can’t specify meta tags for layouts. But you should be able to do this for particular categories for example, As you usually do without layouts.
