Hello, i try to custom the “shop pages” withe Elementor but i have an error.

The shop page is the functional page, please do not add any content to it.

You can configure the shop page view in the settings: https://xtemos.com/docs/woodmart/options-for-pages

and in the Apeparance > Customize > Woocommerce > Product catalog.
