I can’t seem to find the background for this shop page. I need to update it.

You can change the Page Title background by navigating to Theme Settings > General > Page Title

Then change the background under the Page Title Background option. Please note that this setting applies to the Page Title area across the site.

If you want to change the background only for the Shop page, navigate to Pages > Edit Shop page > Page Settings

Then scroll down to the Page Settings section and set a custom background for that specific page.

What is controlling the category?
Can I remove them, can I choose what’s being displayed?

The categories displayed in the Page Title area are controlled by Theme Settings > Product Archive > Page Title: https://postimg.cc/rDGG4tCb

The category menu shown there is generated automatically from the product categories available in your shop.

If you want to remove specific categories from this automatically generated list, you can use the Exclude categories option available in the Page Title settings.
