I don’t quite understand the problem, as everything seems to be working correctly on your site. When the off-canvas sidebar option is enabled https://monosnap.com/file/obtjD6jkDp0dOYDsEUEVimMBjU464R the sidebar on mobile is always hidden until the corresponding button is pressed.

If I click on the 3 dots on the left the screen turns gray but nothing appears, where should it be set? also isn’t there a way to put it without the 3 dots that perhaps appears at the end of the page?

No I have not deleted anything from the site. The sidebar is working fine, the off canvas sidebar only works when you disable the Maintenance mode or plugin from the site, I have deactivated the maintenance plugin now the sidebar is working fine on the mobile.
Please check your site now after removing the browser cache.
