You want to change the gallery product main image when someone hover over the product gallery images. right?
Within the theme there is no such option to change the product image while someone hover over the gallery image, we must have to click an image from gallery so that it will be shown as product main image. The URL which you shared as an example site might be using some third party plugin.
You can also try some third party plugin for this purpose.
