I have bought woodmart decor theme one year ago and now i want to buy HITEK theme for jewelry.

Is it possible to add the quantity in individual products, as shown in red on the screen?

Yep, in order to do that, please navigate to Appearance -> Widgets -> Shop page Widget area -> open the “Product categories” filter and enable the “Show product counts” functionality.
