The “Search for products” text is a gettext string from the WoodMart theme (text domain woodmart). WPML String Translation only lists theme strings after the theme has been scanned. That’s why you couldn’t find it in your search. Please try these steps:
1. Go to WPML > Theme and plugins localization, select the WoodMart theme (and the child theme, if you use one) and click Scan selected themes for strings.
2. Go to WPML > String Translation and pick woodmart in the “Select strings within domain” dropdown. Then search for Search for products.
3. Click the translation icon and add the German text, for example “Nach Produkten suchen”. Add other languages the same way.
4. Clear any cache (plugin, server or CDN) and check the header search again.
Your default language is German, but the theme’s original strings are in English. If WPML doesn’t show a German translation field for this string, use the option at the bottom of the String Translation page to set the woodmart domain language to English. The German translation field will then appear.
