We have found that the categories cannot be edited, we have deactivated the theme and activated the default storefront theme of wordpress to check if the problem was your theme or wordpress, and it is the theme since with storefront it can be edited without problem.

He desactivado un plugin de woocommerce de descuentos y he activado otro y al parecer va mejor. Aunque no debería tener problemas porque se muestra perfectamente en storefront
