What is the best PHP version with the last theme?

We are having issues trying to update from php 8.1 to 8.3 for example, our page is giving us some problems, delays or just infinite loading with no response from the last version (8) we think the last version was more stable, if you want we could give total access to oru website.

Well at the end our hosting has solved it changing our webpage to another server because last one is having some issues and being unstable, we are using php 8.1 we think is more stable. Do you recommend a newer version?
Our theme is compatible with both versions. But of course, it depends on your server’s capabilities.
