We’d like to enable customers to multi-select multiple categories on the shop page filters.
Could you please advise on how we can do this?

Hello,
WooCommerce categories are separate pages and they don’t work as filters. Unfortunately, it is not possible to filter products by two categories at the same time.
You can configure the product categories widget from Appearance > Widgets.
