    The site header on the single product page is different from the header I chose
    But other pages do not have this problem and show the same header I want

    Your default language is English, and you have set Header Grocery for Single Product in the Theme Settings > Single product (by the way it is the default header)

    You need to create the clone of the main header and insert its ID into the translation as per the manual, all the other stings should also be translated in the Strings Translation, such as Account, shopping cart, and others if they are not translated.
