1. Each time you change the image size settings through the customizer, you need to regenerate all images (regenerate thumbnails). There is a special plugin for this.

Also, you have some plugins for cache and pictures, before you configure something, first turn off all third-party plugins.

2. Unfortunately, our theme doesn’t affect these settings and this is the default functionality of the WooCommerce.
