You need to enable showing Product categories in the menu in the Screen Options in the right top corner.
Then add the product categories in a menu and assign them to the Mobile menu.

albert77ParticipantSorry but I don’t know what you mean without pictures. It’s not about product categories but blog categories. I don’t know how to remove them from the menu.

Header Shop is your default header and it seems you are trying to edit it: https://gyazo.com/1a1ccaec6eda4c8244513ab84fa3b4ed
The home page uses Header Startseite and you need to edit this header for the home page. The mobile menu of this header does not have a Categories menu at all in the settings.
The same for the Mobile menu of Header Shop. Please check the Mobile menu > Show/hide. https://gyazo.com/d58b3e5c8ff17c76cdb598c639aad1ba
Then select the Product category menu (which you created in Appearance > Menu). https://gyazo.com/d58b3e5c8ff17c76cdb598c639aad1ba
