Firstly, sorry to say but your referenced Site that you have shared isn’t using the WoodMart Shopify Theme, it is using some other Theme named as “Focal”.
For the first concern in this regard, as you know the Archive pages come from WooCommerce end so there isn’t a direct way possible to add such an image in between the Products.
Although, using the Theme’s Layout Builder under the Dashboard > Layouts > you can create Custom Layouts for these pages and put your choice of content there. Here is the guide to that: https://xtemos.com/docs-topic/woodmart-woocommerce-layout-builder/
For the second concern, to change the Layout of the Quick View on your Site from the available options you can navigate to the Dashboard > Theme Settings > Shop > Quick view > there you can find the Layout as well as other options: https://xtemos.com/wp-content/uploads/2020/09/quick-view-wd-7.jpg
The sliding effect for the Quick view wouldn’t be possible right now unfortunately. For that you can try out any third party Plugin that best suits your needs at your own risk because we haven’t tested any Plugin yet for this sort of functionality.
