Try to enable debug mode in your wordpress installation and check server PHP error logs for better understanding the problem. Also, disable all unnecessary plugins and increase all server limits like Memory Limit, PHP max post size etc. https://docs.woocommerce.com/document/increasing-the-wordpress-memory-limit/
Then please, provide us your admin access so we can check it.

We can’t troubleshoot anything without error logs. Currently, there is only on error seen 500 Internal Server Error

I really love your theme, but I have this “ajax” problem (speed and hosting capacity are not an issue).
Should the theme be active at the time you are solving the problem? If so, can you please notify me when you are going to be here, so I can activate the theme again and give you my user-pass to solve the problem. At the moment I am running wordpress website on that hosting, so I can’t leave it with no content for too long (risk to loose my google rank).
