01. Yes, it’s possible to display all size variants as swatches on the product page.

To achieve this, please follow these steps:

Configure Swatches for the Attribute:

Navigate to Products > Attributes, then click on “Configure terms” for the Size attribute.
For each term (Small, Medium, Large), set the Swatch Type to Text: https://ibb.co/svdRrfjM

Assign Attributes to the Product:

Edit your product and go to the Attributes tab. Add the Size attribute, check “Used for variations”, and then generate variations under the Variations tab.

02. By default, WooCommerce allows customers to choose one variation at a time with a single quantity field; there is no option in theme settings to display multiple quantity fields for each size (variation) on a single product page.
