Hello,
To change the text of Choose an option you have to use Loco translate plugin.
You need to go to Dashboard >> Loco Translate >> Plugins >> WooCommerce >> Search for your string and translate it and save the changes.

sorry, my description of the problem was not very good. I want to have two different strings in those boxes. I need “choose your system” in the first and “choose your language” in the second”. Is this possible?

Unfortunately, you can not do that. You cannot translate one string with two strings. Because its only one string which is displayed on multiple dropdowns.
It requires customization and this is beyond our limitations and support policy.
