Display a filter at the top of the store page and also add a haeder to display a title or items.
When I try to display a header for the other categories, the haeder is placed at the bottom and not at the top.

Your header is always at the top and showing just fine. You need to check back after clearing your site and browser cache.

Hello,
Click and show option is not possible in the sidebar for the filter form. You can add the filters in the sidebar from Appearance >> Widgets >> Shop page widget area.

Then you can populate it according to your needs.
If you want to ask anything else then provide with some relevant screenshots which filters you want to add to the sidebar to check it myself and help you out accordingly.
