Extending sorting widget with a new option

I need to extend the sorting widget with a new option, however, I want to try to avoid modifying the main theme if I can avoid it.
How can I accomplish this with the child theme?

Unfortunately, we don’t have an instruction for this. Sorting values comes with WooCommerce plugin and can be modified in a scope of our child theme.
