You can remove the brand, however, the category would not be shown on the grid. Enter the attribute and disable “Show attribute label on products”

You are right. You need to change the hover effect in the Theme Settings > Shop > Product Styles. For example, Show summary on hover shows the category.

Have you removed the attribute label, if you have not provided your site admin access and product URL I will check the settings
