You need to enable the page title from the theme settings. Navigate to Theme Settings > Page title > Page title design > Select page title section design.

I made the changes you suggested but I don’t see any difference. I am interested in customizing Header of the categories page I also inserted fake text images. Specifically the category of “hotels – hotel” nothing has changed

You are using Custom WooCommerce Builder layouts, which are part of WooCommerce Builder from WoodMart.
