Home Bar Text Change

Hello,

I recently purchased my theme and I was hoping that someone can help by sharing how to change the names of the pages in the home bar. In the Demo Theme I set up there are options such as Home, Blog, Shop, etc. However, I want to change the Shop to Gallery and so on. I attached a file. Hope it helps.

Additionally, can someone, please explain what are the benefits of enabling the Maintenance mode and what it truly is?

Please create a menu in WordPress https://codex.wordpress.org/WordPress_Menu_User_Guide
