Hello,
The options you are referring to on the shop page are product variations. To modify them, you need to edit the product and configure its variations.
Please navigate to Products > Edit Product > Product data > Variable product > Variations. There you can create and manage attributes.
To show variations in the shop page, Navigate to Theme Settings > Shop > Variable products > set them as “Grid swatch attribute to display”: https://postimg.cc/FfxThbRd
