How to change from a mandatory field to a permission field at the shipping detail page, from where i am doing it?
or even how to remove field like for example zip code or so.

You can find the options in Appearance > Customize > Woocommerce > Checkout.

If the options are provided by default Woocommerce, you will need to find a plugin managing the checkout fields.
