1. You are trying to change it in the wrong way, the “Select options” text is not related to our theme, therefore you should change it through the Plugins (Loco Translate -> Plugins -> WooCommerce).

2. With the help of the below code you can hide the icon, enter it into the “Global Custom CSS” area that is in Theme Settings -> Custom CSS.

3. You have another product’s style for the “Ajax product tabs” element, therefore there the above code is not working. In the settings of this element change the product’s style as you have in the Shop so after that the code will work.

4. You just need to define the link to the appropriate button and bring them out with the help of the “Social buttons” element in your page builder, also in the settings of it you can set which buttons you want to show.
