In order to set global configuration, navigate to Theme Settings > Page Heading and configure: http://prntscr.com/iyyz1d
You can configure each page individually entering page editing mode and setting: http://prntscr.com/iyyzsm
As for the Shop page and Category Page navigate to Theme Settings > Shop >

I Cannot able to find the edit page option for “SHOP” page, it is available for other pages.

Your Shop page is on the 5th page have a look at the screen http://prntscr.com/iz7knd it can be edited from admin panel.
