If I upload large images, over 150kb each, to the product pages to ensure high-quality textures, will this affect the loading times of category pages that feature more than 20 product listings?
Or does the category page automatically compress these images?

Chaleur NaturelleParticipantI have not found my answer. Does the category pages display a lower resolution or ‘thumbnail’ version of the product image, which may be automatically generated and compressed by the system, reducing the impact on page load times?
I also noticed that you are talking about WEBP pictures. Most of our picture are uploaded in WEBP. But I have noticed through Hotjar that some visitors were unable to see them.

WoodMart theme does not compress the images and neither does any WordPress theme.
You need to optimize images using a service like this: https://imagecompressor.com/ then upload images again. Alternatively, you can try to search for a plugin for this purpose to optimize directly in the site.
Try to enable the Lazy load for images in the Theme Settings > Performance.

To be more concrete, do you believe a 90KB image, placed on the first position on a product page, could affect the loading speed of the category page?
What would be the optimal size in your view, while keeping in mind that I want high definition for the image?
Please be aware that I have already installed lazy loading and WP Rocket on my site.

Actually Woocommerce default recommended size of the images are 300×300 for the shop and category archive pages and 600×600 for single product pages.
