LCP Issues that Started about 2 months ago?

Hi, around two or so months ago (I think) my LCP on a site that has been running well for 2 years now. Started having issues with LCP and has dropped significantly in SEO rankings. The LCP has always been around 2.6-3.3 or so which is ok, but now fluxuates between 6+ sometimes as high as 12?. I have also noticed even on new staging sites I use the LCP is a concern.
From what I can see, it seems to me considering the whole page to load? instead of just above the fold?
Latest version of Woodmart, Latest Version of Elementor, Latest version of WP-Rocket
Am I missing something?
