That navigation is adjusted via Theme Settings -> Product archive -> Page title -> https://prnt.sc/HeVyjl8biBYQ

You can hide the categories in page title via Theme Settings: https://prnt.sc/VvMkjQia1ISB, then you can import already created layout via Layouts -> Product Archive -> Add new: https://prnt.sc/3-4_dLyeEfuP and define another menu – https://prnt.sc/A3vmDDtcNhK1

Or you can change the categories themselves so they will be changed in the page title, you can change categories via Products -> Categories – https://prnt.sc/GblDnjAYbebE -> https://prnt.sc/J75SE2NIyY3y
