In the mobile menu, in addition to the categories it adds another area of the menu to me, how do you control the content of it, or cancel it?

Please switch to the mobile view of the Header and enter the Mobile menu element, disable showing the categories in the element.

When you remove the product category menu, the main mobile menu remains.
