Off canvas sidebar for mobile

How to edit text “show side bar ” for desktop ( hidden on desktop for now) and mobile……………i have using product layout for category archives but not for shop page……shop page i am using woodmart default layout….

Also , there was default sorting option in sort menu , but now its sort by latest is always selected and other sorting options disappeared…..
