Your error log clearly shows that error arrives from shortcode.php file line 205. On this line located anonymous function that was introduced after 5.3 version of php. And the only one reason for your error could be an old php version. Please, contact your hosting providers and ask them to check it. Probably you have not 5.6 but some older. You can also check by yourself in Woocommerce / System Status.
