Product Attributes

Hi I am seeking support for the first time.

I can see by default the product attributes are sizes and colors.

1- I want to develop a seed trading website so my product attributes will be like Organic, Hybrid, Pelleted etc etc. I tried adding them but I don’t see how can I assign them to the products
2- What are linked variations and size guides in the theme, these are not woocommerce default options so I guess I can do something similar for my industry
3- how to show custom filters on each category separately for e.g in Category Vegetables I want to show filters such as filter by price, filter by seed type (organic, hybrid etc) but in Category flower I want to show filters such as Winter, Autumn etc how can i do that?
