Product sorting

How can I change the sorting of products only on a certain category, would it put the latest products only for certain categories?

You can use our Layout builder, in which you can create your own layout for specific category, see screenshots for better understanding https://prnt.sc/tcSapIvE2Zy3.

Then, use Products (grid or carousel) widget, and set Order by values https://prnt.sc/7KQDQk5nttvl
