it is possible to display only certain categories in the product filter as one knows the many other online shops if you choose for example from Men then only the subcategories of Men to filter like T-shirt, pants, sweaters and not even the categories of Women or Sale Angezeit because but if then clicks on women that only the subcategories of women are displayed such as T-shirt, pants, sweaters and then the categories of Men are no longer then time and the upper category shop where everything is displayed no longer displayed becomes?

There is no such option in our theme to add such a banner on all pages. The only way is to show it your home page as a WPBakery row with background, borders, and text.
