Search bar / select a category – how does it choose those selected categories?

Hi,
I would like to know what is the logic behind the selected categories shown on the drop down menu of the search bar SELECT CATEGORY. Can I put all the categories there? Can I select the ones I prefer to show?

“Select Categories” displays all the categories existing on your site and you cannot choose and set the ones you prefer.
