I have found in the setting where I can change the search widget from products to post…. but the placeholder text still says ‘search for products’ – where can I update this?

You can install the plugins, change the wording and then deinstall the plugin and the phrase would change. This plugin is used not only for translation, but also for the rewriting of the strings.
