Also can you clarify how i can apply the theme preset to one specific WOO category for example or a specific page ID ?

1) You can change the shop catalog display from Appearance >> Customize >> Woocommerce >> Product Catalog.

2) You can apply for specific category you can read our detailed documentation for help:

3) You can set the single product header from Theme Settings >> Single Product.

Note: It is not possible to add a shop page like the header on a Single product.
