By means of widgets in Appearance > Widgets which you can add to the Shop page widget area. You can add filter by Product category, filter by an attribute, filter bay tag and others.

I would like to set the default parameter when the users go to the shop page; the first view. I would like to change the sequence list. Is it possible?

You can change that in Appearance > Customize > Woocommerce > Product Catalog > Default sorting.
