I am currently using the theme default layout, and I would like to edit that layout. But it empty in the layout tab? How do I edit?

In some demos, we do not use the custom layouts which is why they were not imported on the site with the demo content. You need to create the layouts manually:

How do I keep my current layout if I am going to create a new one?
Hello,
You can keep your current layout by not assigning the new layout globally. Create the new layout and keep it inactive This way, the default theme layout will remain active elsewhere.
