Can I get a category of products to sort differently

I am doing a manual sorting of my product categories on my website. I have items that have a certain color and do not like them to be sorted based on date normally and want them to have a certain flow in regards to colors. So black to grey to white. You can imagine I think. However I would like to have one category with all the NEW products. That category I would like to be able to sort based on date. Normally I would have just made a new elementor template that I would only display on that certain archive page. Since I now have Woodmart that does not seem to be possible anymore. Am I doing something wrong? How would you advise me to go about this?

BobthestoreownerParticipantYes. I sell 150 colors of some beads. I have those beads in multiple sizes. I want to sort them manually from 1-150 per size. This is normally possible within Woocommerce when sorting the items. But let’s say I add a color of blue and put them on their right place between these 1-150 for all sizes. That is great and normally possible. But I also have a category for NEW products or for SALE items. Those I want to sort differently. If I change the sorting in the NEW product. Woocommerce also changes it in the other categories. They always see it like you just have 4000 products and they have a sorting. It does not remember it per category.
So a fix for me would be to have the NEW category (which is most important) sorted on like date. And have the others on manual sorting. Normally I could do this by creating a separate product archive and saying in elementor that i want this only displayed on the NEW page. With your theme it seems like this option is not allowed.
So yes, one category different, the NEW products category. Not any more. Sorting on date please, makes most sense for new items 🙂 Would that be possible? I really hope so.
