thanks I have activated the categories on mobile, but I see that different, there is no category that I created GIAPPONE. Where are they to be able to change the categories of photo 1? What do you usually recommend for how to use categories? thank you

The categories in the shop page shows all the existing ones, the categories in the Mobile menu show the menu you have created in Appearance > Menu.
